Venison Ragu Bolognese

500g venison mince
2 banana shallots
125ml red wine
2 cloves garlic
3 tins chopped tomatoes
900g tagliatelle pasta (fresh preferably)
1 packet fresh basil
50g parmesan cheese

Dice the shallots and thinly slice the cloves of garlic. Gently fry until soft and slightly translucent. Add in the venison mince and continue to fry.

Add the red wine and let it reduce in the pan before adding the chopped tomatoes. Slowly simmer for a couple of hours, letting the ragu thicken as water evaporates off. Season with salt and pepper to taste.

Cook the pasta in boiling salted water for 3-5 minutes if fresh, longer if using dried. Drain from the pot, reserving a bit of the starchy water to add into the ragu.

Gently fold the pasta through the ragu ensuring the sauce coats all the pasta. Place into warm pasta dishes, garnishing with fresh basil and parmesan cheese.

Haggis Stovies

Leeks
Haggis
Salt & peppers

Dice the neeps, carrots and potatoes. Add the neeps and carrots to a pan, cover with water and bring to the boil. Once soft, add the potatoes and some salt and pepper.

Once cooked, add some chopped leeks and haggis (or veggie haggis) to taste. Serve in a mug with a sprinkle of chives and some oatcakes.
